Milk softens acidity, adds sweetness and body, and amplifies caramel, nut and chocolate notes while muting sharper flavours. So, with that in mind, we tend to prefer coffees that have these chocolatey, nutty, caramel-y flavours when paired with milk.

Coffees chosen for milk typically have higher solubility, deeper roast development, and flavour profiles that cut through dairy—creating balance, structure and clarity rather than tasting thin or lost.

Short answer: no. We don't believe in any concrete rules in coffee; after all, taste is individual and your experience matters most. There's plenty of people who quite like a fruity single origin with milk, and variety is the spice of life. This list is simply our roasters' preferred pick for milky drinks.

Blends (mostly) work best with milk because they tend to have chocolatey, nutty and caramel-like flavours. These harmonise best with milk, which can cut acidity.

Also, milky drinks tend to be your stalwarts, your daily flat white, your beloved latte; blends can be really consistent, so you know what you're getting every time.

Personally, we think The Captain is the perfect blend for a Flat White. The Captain is a delicious mix of subtle fruits and caramel tones, which add a touch of intrigue to a moreish, comforting drink.

That said, we roast all our blends with a flat white in mind, so you can't go wrong with fan favourites like Joe's Green Balloon, or Drake. Especially if you're a chocolatey and nutty fan.

We do indeed. We have a dual roasting program: meaning we roast beans slightly differently depending on if they'll be brewed for black or white coffees.

The way we roast for black coffees allows some of the more unique flavour characteristics to shine through.

Adding milk makes a big difference to the drink, so if we know it'll be drunk black, we can roast to let those characteristics that would otherwise be altered by milk to really shine.
